Purple Peruvian Potato & Corn Summer Salad with Crisped Provola Toasts

Chop up some shallots and toss into a pan heated with olive oil. Get the shallots slightly brown before adding the potatoes (sliced thin!) Add a little salt and pepper and cover for a few minutes. Then add some chopped pasilla pepper, again cover for a few minutes longer.

I like adding the ingredients one at a time, it helps bring out their individual flavors. Remove lid and get the potatoes good and crispy. Add some chopped yellow peppers and remove from heat.

Take the uncooked corn directly off the cob and combine with sliced tomatoes and a spring salad mix. Layer your plates with the hot and cold ingredients, add a little balsamic vinegrette if you like. Go easy on the dressing, the potatoes and shallots add quite a bit of flavor.

Serve with a side of Crisped Provola Cheese Toasts and you’re good to go. (drizzle a tiny bit of olive oil on sliced sourdough bread, top with sliced provola and cook on a baking sheet for a few minutes until cheese is brown and bubbly, then remove baking sheet and crisp the toast directly on the oven racks for a minute.
